In simple terms, keep the focus on the subject and maximize your aperture by setting it to something between f9-f11 or more (if your camera allows)..That's as simple as I could get..

When it comes to maximizing the DOF, the hyperfocal distance is a very important concept.
Simply stated, the hyperfocal distance is the shortest distance from the camera such that everything from approximately half that distance to infinity will appear sharp. Focusing the camera at the hyperfocal distance results in the greatest DOF possible for a given combination of aperture and focal length. An approximate hyperfocal is somewhere near the 1/3rd of the image. To make it clear - Divide the image horizontally into three parts, focussing on the intersection between the second and the third part will give a probable max DOF, of course keep the aperture max small and lens max wide. Hope this ray optics is clear this time.. if not then I have a diagram also which m lazy to put here.
