I see its your first post- Welcome to xbhp.
The word 'Superbike' on this forum in general refers to large engined bikes. So they include everything from supersports, sport-tourers, dirt bikes, cruisers, luxury tourers, nakeds etc, therefore, you have to be more specific. Ideally most cruisers are suitable for shorter riders as their seat height is lowest among bikes. But if you have a sports/supersports bike in mind, then they are mostly of the same height with very minor variations, but depending on the width of the rider seat your reach to the ground can vary. However, it is not essential to flat foot both your legs, as long as you can tip-toe both your legs, that should be fine as most of the 1000cc supersports are not too heavy unlike a Hayabusa or a ZZR1400.
