The dangers of this happening are that the valve and piston collide and both get damaged. The other problem is that the valve does not get seated fully thus allowing premature escape of the gases leading to loss in performance.
The Desmo system avoids this problem because it does not use a spring. It employs a 2nd rocker arm driven by a separate lobe to force the valve shut. This avoids the problem of the spring not being able to return to its original position in time. Even now the in Motogp the Ducatis rev much higher than the Yamaha or the Honda thanks to its Desmo valve system. The Ducatis therefore also produce the maximum power out of the three brands.
So the basic difference in a Desmo Valve System is that it employs an extra rocker arm to close the valve shut instead of depending on the workings of a spring.
