use a cht (cylinder head temperature) guage..
this is the best option for independent monitoring of cylinder head temperature.

i think there are two type of auxiliary temperature gauges for motorcycle engine-- one can be stick on cylinder wall externally and another one is basically engine oil temperature gauge, it goes into oil filler cap location. some of these are available on online shops. just search.

Here is a super simple circuit to read temperature using a LM 35 Temperature sensor with a Digital Voltmeter...The 9 Volts battery can be replaced with 12V bike supply or +5 V from a logic circuit...

won't it melt at that temperature since we have to stick it to engine block external walls, somewhere between fins.
it is rated for only -55 to +150 deg. C, and engine temperature are somewhere above 160 deg C, i guess.
some sites say that you have to connect a resistor in parallel to its output, is it required.
it says input voltage can be 5 to 40 volts, does it mean to get temperature reading in voltmeter, the multiplying factor will depend on input voltage.

I don't think the externals will reach temperature above 120~130 C.Output voltage will be dependent on the temperature...which is 25mv per centigrade read directly in a DVM in DC voltage range .
