I think I now know why you want to choose between the Dominar or Versys. To be honest with you, it's a tough choice. But right now, I think you should go for that ride and find out if you enjoy riding. The more you go out.. the more you realize if this is something that you enjoy doing.
I think for any bike you really have to get the mods on. For example, the Versys might seem touring ready but you need to also get some accessories on (like the frame sliders, radiator grills, a RAM mount) especially since you are riding in India. Getting this from OEM may be a bit expensive. I think budget isn't a problem for you, so I think you should be okay with that.
Anyway, I'm not sure if the Himalayan 650 is going to come out any time soon. If it does, that would be a great alternative.
So Kawasaki had already introduced the Euro5 spec models into India (as BS4), which is why there wasn't a lot to update in the first place. They will relaunch it with updated graphics (probably) and with compliance to emission norms.
I think the Duke won't suit your riding style, because it is usually frantic. The Interceptor could work if you like city rides and the occasional highway rides. It is a relaxing bike in general (of course, you need to change the seat first).
Again, it's a difficult choice but I'm hopeful that you will find the answer after you finish your first ride.
