To me it sounds like one crazy ride.

My suggestion:

1) Instead of doing concecutive 800 kms,spread it across.
2) As you ae not much intrested in sighseeing then make night stays in small towns. This will reduce the cost of stay. Also choosing small towns will aviod time loss in traffic of bigger cities. Also this will help spreading distances per day evenly.
3) I think you guys shall keep 1 full day for proper bike servicing and rest.

Me planning 15 days from Pune to Leh with R15... I believe up & down could be 5500 Km max.... Please advice

Dude Its gone be very hectic.. But as a Biker we don worry . So Hats off to you for thinking such a daring act. Hope you will have a successful Trip. Only thing I can Say.. Go Go Go..............................and do keep us updated about your plan.

This seems to be a really damn hectic ride..!! It can be do-able, no doubt about it as it purely depends on the Biker & The Bike.. But to calculate the kms per day one has to also take care about the roads & terrain you may be riding on.
In cases of hills, its not easy to cover even 500kms per day if you planning not to ride in night.
Hence try an stretch the days & break up the kms done per day to have a happy & pleasurable ride.
You need to be very strict on the timetable to implement this kind of ride. You cannot afford to wake up late any single day.
Do keep few days in Buffer like +- 3 days in case of anything.
At times, even a puncture can eat your couple of hours.
Am not quiet sure how easy or hard its gonna be to ride so many kms everyday on a R15 with loaded luggage..
