i have few suggestions for you, may be some of them already mentioned by "AARGEE"
1) after diwali rajasthan is full of tourists spl. in Udaipur, abu & jaisalmer so prior booking is must for avoiding any problem
Udaipur:- i'll help you guys for udaipur booking dont worry abt this.
Mt. abu:- if dont get hotel in mt abu u can come down to abu road which is just 22 k.m from mt abu and you can get room there.
Jaisalmer:- u can get room with uncovered parking facility but if u want covered parking then prior bookng is must.
jodhpur:- you can get room easily here

2)there are few changes in route plan suggest by "aargee" as u mentioned its photography tour
Day 1 - Mumbai-Ahmedabad
Day 2 - Ahmedabad - Mt Abu
Day 3 - Local site seeing & leave Mt Abu towards Jaisalmer
Day 4 - Jaisalmer + local site seeing
Day 5 - Jaisalmer-Jodhpur & stay overnight (Jodhpur doesnt have ny place to visit except Ummed bhavan palace, u can visit it on same day
Day 6 - Jodhpur-Udaipur (Via- Pali- Falna-Sadri-rankpur-again sadri-Desuri- khumbhalgarh-haldigati-udaipur)
Day 7 - Udaipur + Local site seeing
Day 8 - Udaipur to Ahmedabad.(via- Jhadol-som-kotda-ambaji--palanpur-ahmedabad)
(This route is one of best route for photography purpose but till ambaji i.e. 165 k.m. road condition is bad)
I will join you from udaipur to ambaji if u want 
Day 9 - Ahmedabad to Mumbai
