RE Himalayan has Mono Shock which might not be very helpful in this case (back pain) .
Generally Dual Shocks are better compared to Mono Shock in absorbing vibes / shocks.
But would differ from manufacturers.
I have felt P220F to have a very soft suspension and was a comfy ride.

The problem is not with the cushioning of the seat of the bike. The problem is the SUSPENSION.
I think a bike with good suspension setup is what I need.
I have heard that Royal Enfield bikes have good suspension. Other bikes which I have shortlisted are Yamaha FZ, Honda Unicorn Suzuki Gixxer, Bajaj Avenger Street 220, Honda CBR 250R.
yamaha FZ has a good suspension but it is a bit too soft which means the bike almost just sits down on the wheel when you're carrying a pillion, but maybe they fixed that in the new lot.
Honda Unicorn is a good work horse trust me I own one but the seat and suspension are not even close to comfortable. In fact the seat will feel like a wedge between the two sides of your backside on long rides and the suspension though softer than any duel shock absorber bike is by no means soft and I own a 2014 duke 390 which is infamous for having a stiff suspension and I find my duke has a softer suspension by comparison. My opinion only and others may think differently.
Suzuki Gixxer. i personally never rode one but I heard good things so test ride it for best results.
Bajaj avenger 220 is like a sofa with wheels. The duel rear shocks are admittedly a bit stiff but the overall ride is just so comfortable that you won't even notice. Be warned that it is a Bajaj and will have niggling issues. Its kinda their trademark.
CBR 250R is a proper touring sport bike and has a comfy suspension and a good seat (not as good as an avenger though) but the keyword here is 'SPORT' which means a committed albeit not as committed as some other bikes seating position which has been the cause of many a backaches in the past.
But again I'll say that the suspension is only half the story (Unless you do dirt biking to commute to work and back daily) the seat plays a vital role too.
