I lived in Chennai for 17 months exactly with a 'Jharkhand' registered bike. I'd a valid NOC, but that's valid only for 6 months.
Now, I'm in Bangalore. Already spent 4 months here. I still have the 'Jharkhand' reg number on the bike.
In Chennai, I always carried my PUC, insurance, DL and NOC with me. Never was fined by any cop for the JH number plate.
Moreover, the traffic cops in Bangalore as well as Chennai are heavily misinformed about the registration process. They insist on getting a KA/TN number as soon as you reach the respective cities.
You've already done a good job by paying the road tax (and hence you're eligible for requesting the old state govt to refund your money you paid earlier to that state - BUT not worth the time spent. May take months!!!). You can carry the road tax papers and other docs as I mentioned anytime.
