I own a Nikon D3100. I want to know which mode is best for shooting portraits? The camera's inbuilt portrait mode or Aperture priority mode? Should flash be used or not?

Any tips to get good portraits. I will be covering a party event this week.

Well on a dslr, u can use a 50mm prime lens for best portraits. If u dont have one, your kit lens should be just fine.

Aperture priority is good, I personally shoot all my images either in aperture priority or shutter priority, but practice lots if you dont use this mode often, also shoot in raw as you shall get better results if there is a need to do some tone remapping.

About flashes, to be honest the best portraits are attained through a continuous source of light rather than a flash.

If you are not uisng the M/A/P mode in 3100 , you are not using the DSLR for what it has been made. ANy other mode are all there in P&S cameras too.
Kit lens is good but it will miss depth of field.
Flash usage should depend on lighting of the surrounding, which can also be compensated by increasing ISO(last option).

shooting in RAW do results in good images but all the detailing is lost as soon as I open and convert them in picasa, any other software which will result raw images to jpeg later without affecting quality and details?

Try Adobe light room, it's a boon to dslr users.

Update yourself buddy, picasa is passe. Use LightRoom and Adobe CS.

@keshavrana : Its slightly tilted on right, and little bit more sharpness, it would have looked nice.
@princesirohi : The focus is on the grass under the dew, if you look closely.
